
A traditional Austrian tea cake
Ingredients
- 1 package of dried yeast
- 1 cup of milk, warmed
- 1 cup of sugar
- 200gm butter (softened)
- 5 eggs
- 1tsp vanilla
- zest of 1 lemon
- 3/4 cup raisins
- 1/3 cup ground almonds
- 1/2 tsp of salt
- 4 cups of plain flour
Method
Sprinkle yeast into milk to dissolve.
In a large bowl beat sugar and butter until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, lemon zest, raisins and almonds. Alternate adding the milk and sifted flour plus a pinch of salt into the mix, incorporating gradually.
Bitter and flour tin well. Pour batter into tin. Cover and let rise for 2 hours.
Bake on a pre-heated oven at 375°F for 40 minutes.
While still warm, dust with icing sugar.
